Zucchini: From Raw to Bread to Eaten, in Seconds

When bored on the weekend, lately I bake. Or eat. Or eat then bake. Or bake then eat. You get the picture. 

This weekend I decided to take the leftover zucchinis in my fridge and magically turn them into a ridiculously wonderful snack. I followed Joy of Cooking’s recipe to a lower-case “t” (I added nutmeg that they didn’t suggest, and I’m not sure I could even taste in the finished product… but, my, did it smell good baking), so instead of showing you the recipe, I’ll show you my process instead!

STEP 1: SHRED ZUCCHINIS, NOT FINGERS.

STEP 2: MIX WITH YUMMY INGREDIENTS, TRY NOT TO GORGE ON BATTER.

STEP 3: OVERFILL YOUR ONE BREAD PAN, EVEN THOUGH THE RECIPE CALLS FOR TWO.

STEP 4: COOK THE BREAD FAR LONGER THAN CALLED FOR, SINCE YOU OVERFILLED THE PAN (SEE STEP 3).

STEP 5: SLICE INTO THE BREAD, WHEN IT’S COOLED JUST ENOUGH. ADMIRE YOUR OWN HANDYWORK.

STEP 6: BUTTER, EAT, ENJOY, REPEAT.

STEP 7: PASS OUT FROM BREAD COMA, WAKE UP AND START AGAIN.
